I read an article on NPR recently about a neighborhood that was trying to offer healthier options, fruit and vegetables at a local mini mart in the hopes that it would influence people to buy and cook healthier options. In the article they talk about if a family or person knows 20 go to recipes, they are more likely to cook healthier nutritious meals more often than turn to junk or fast food. It made me think about what I make for dinner time and time again. And here’s a list of meals because I often forget things and try to rack my brains for new things to make frequently. Plus a few years ago I learned a lot about cooking and it’s amazing how just a few skills can bring your cooking skills to a decent level.

  1. Taco Soup / Chili with beef
  2. Salmon, greens (asparagus, Brussels sprouts, chard, kale), and grain (couscous, quinoa) or sweet potatoes
  3. Chicken burgers with cheddar, BBQ sauce and avocado
  4. Bratwursts with sauerkraut
  5. Greek salad (as a side) (often for turkey, chicken burgers, or bratwursts)
  6. Heirloom tomato, red onion, goat cheese and homemade vinaigrette (as a side)
  7. Golden beat salad (as a side)
  8. Spinach salad (as a side)
  9. Turkey meatloaf, fingerling potatoes or purple majestic potatoes or other potato, and green (green beans, asparagus, brussels sprouts, chard, kale, other)
  10. Chicken sausage or ground beef, Spaghetti squash or spaghetti with onions, peppers, mushrooms and tomato sauce
  11. Multi-colored pasta, green beans, halved cherry tomatoes, salmon, and pesto
  12. Cowboy quesadillas
  13. Tacos with beef, chicken or fish, red cabbage, cheese, avocado, red onion, radishes, salsa, tomatoes, sour cream
  14. Spinach “enchiladas” – black beans, chicken, spinach, salsa, tomatoes
  15. Lean green chili with chicken
  16. Burritos with chicken and pinto beans (and same stuff as tacos)
  17. Turkey burgers with avocado and BBQ sauce, sweet potatoes as a side or carrot and zucchini fries
  18. Stir fry – rice and rice noodles with ginger chicken, broccoli, pepper, mushrooms, bok choy, carrots, snow peas
  19. Chicken noodle soup
  20. Falafel in pita with lettuce, tomato, cucumber, hummus, red onion, taziki, goat cheese
  21. Chicken in chimichurri sauce with a grain (quinoa) and green
  22. Asian chicken noodle soup with egg noodles
  23. Minestrone soup
  24. Cumin-Spiced Fish Tacos with Avocado-Mango Salsa
  25. Grilled Chicken Florentine Pasta
  26. Zucchini-Beef Enchiladas
  27. Frito Chili Pie and Honey Cornbread muffins (instead of Fritos)
  28. Beef Stew with Okra, Green Beans, Carrots, Potatoes, Corn
  29. Mixed greens with grilled mushrooms (as a side) / Winter Salads
  30. Chicken and broccoli stir fry
  31. Healthy Eggplant Puttanesca with kalamata olives, roasted red peppers and capers (ricotta not necessary)
  32. Shrimp over rice, salad greens, and lentil soup with grape tomatoes and basil and roasted asparagus on the side
  33. Blue Apron Shrimp & Pineapple Fried Rice (add more vegetables)
  34. Sausage Egg Roll in a Bowl
  35. Sarah Adler’s Lean Green Chicken Chili
  36. Chorizo Breakfast Taquitos
  37. Brown Butter Cod with Corn Shishito Peppers Purple Potatoes
  38. Summer Chicken Ramen with Fresh Noodles Purple Beans Tomato
  39. Crispy Farro Shrimp Stir-Fry

Probably a bunch more, I just can’t rack my brains for them right now.
